White Koji and Fermentation, Abundant Blessings
Since its founding in 1916, Kirishima Shuzo has been producing Shochu, harnessing the power of koji fermentation. Amazake, known as "drinkable IV" for its abundant nutrients, is also a fermented food made from koji. By using white koji, which is used in Shochu production, we have created an amazake that contains more (*) health- and beauty-boosting components, such as citric acid and ferulic acid, compared to amazake made with yellow koji.
