KIRISHIMA BEER uses the renowned Kirishima Rekka-sui,
water from the Shirasu Plateau in southern Kyushu, and is crafted with skills honed through a century of shochu making.
Since we began in 1998, we have grown alongside
our local community, steadily refining our quality.
That refined taste is born at our brewery at the foothills of the Kirishima Mountains.
Our beer is crafted from just malt, hops, and water.
Because the recipe is so simple,
it is no exaggeration to say that the quality of the beer is defined by these ingredients.
To craft KIRISHIMA BEER,
we carefully select premium imported malts and hops, blending them to achieve the perfect balance of
flavor, color, aroma, bitterness,
and body for each product.
Ground malt is added to our custom mash tuns
from Austria and mashed with pristine
Kirishima Rekka-sui purified by the soil
of Southern Kyushu.
After the wort is saccharified by natural enzymes and filtered,
we add the hops and begin boiling.
Hops are essential to the brewing process,
as they define the beer’s bitterness and aroma,
and act as a preservative.
Yeast is added to the cooled wort,
beginning the transformation into alcohol.
As the mixture bubbles and ferments,
it is the moment the brew truly comes to life.
Once fermentation is complete, the beer is transferred
to storage tanks to mature where their flavors
and aromas gradually mellow and deepen
as they await the moment that they are finally poured into your glass.
